On the blog today I have a delicious recipe for Strawberry Lemon Custard Croissants. This is perfect for kids and adults alike.
Strawberry Lemon Custard Croissants Recipe:
2-3 lemons divided use
2⁄3 cup granulated sugar
3 1⁄2 tablespoons cornstarch
4 egg yolks
2 1⁄3 cups milk
3⁄4 cup light cream
2 tablespoons butter or margarine
1 teaspoon vanilla extract
1 1⁄2 tbsp lemon zest
Instructions For Strawberry Lemon Custard Croissants:
1. Zest all three lemons to make 1 1⁄2 tbsp of lemon zest, set aside
2. Cut the lemons in half and juice them to make 1⁄4 cup of juice.
3.Place sugar, cornstarch, and lemon zest in a medium saucepan, whisk to combine. Whisk in egg yolks, milk, and cream.
4. Heat over medium-low heat while whisking until thickened and the mixture starts to boil. This will take about 15 minutes.
Once boiling, allow it to bubble for 1 minute while whisking.
5. Remove from the heat and stir in butter, lemon juice, and vanilla.
6. Pour into a medium bowl.
7. Immediately cover with plastic wrap, resting the wrap on the surface of the custard.
8. Refrigerate for at least 2 hours.
Croissants and toppings
6 large fresh butter croissants
2 lbs fresh strawberries, rinsed and dried
1 lemon cut into small slices
1⁄4 C powdered sugar to dust
1 disposable piping bag with star tip
Directions for Strawberry Lemon Croissants Recipe:
1. Take a paring knife and cut a deep slit into the top of the croissant, make sure to not cut all the way through, you don’t want the custard to seep out.
2. Cut the strawberries into slices and set aside
3. Scoop the custard into the piping bag and set aside
4. Once you have your ingredients cut, take the piping bag and pipe a layer of custard into the slit of the croissant. You want to pipe enough to “plump” up the croissant
5. Once you have filled your croissant with custard, take a few strawberry slices and stuff them into the croissant
6. Pipe a few dollops of custard on the top and garnish with strawberry slices and lemon slices
7.Repeat steps with remaining croissants
8.Dust with powdered sugar and enjoy
