As a mom, working dentist, wife, tennis player, mahjong player, friend, etc, my life is very, very busy! On the days that I work long days, I like to make a meal that is very easy to make and that the kids would love. I also like to make a recipe that I can use for leftovers at work the next day. That is why I love Buttered Noodles. This Buttered Noodles recipe is simple to make and very delicious! My whole family loves it and best of all I usually double the recipe so I have it for the week. To this recipe, I also add in proteins such as chicken and tofu. You can make it with protein but I usually make it without, and then my family can add in their own protein after it is done. Ingredients for Buttered Noodles:
- 8 ounces egg noodles
- Salt
- 3 tablespoons butter
- ½ cup freshly grated Parmesan cheese
- Pepper
- 1 tablespoon fresh parsley, finely chopped (optional)
Directions for Buttered Noodles:
- Bring a large pot of water to a boil and salt well.
- Boil the noodles according to the package directions, just until al dente. Reserve 1 cup of the pasta water and set aside.
- Pour the noodles into a colander to drain off the excess water.
- In the large pot, melt the butter over medium-low heat. Add the noodles back to the pot along with the reserved pasta water, grated Parmesan cheese, and pepper to taste. Stir well then top with fresh parsley right before serving.
