I am always on the hunt for new recipes to try! Lately we have been eating chicken almost every night. The whole family loves chicken so it is easy when I find recipes for ways to use chicken. This recipe for the Maple Garlic Shredded Chicken Sandwich is simply delicious and so easy to make. I hope you enjoy it as much as me!
INGREDIENTS for 1 ½ pound of chicken (you can use breasts, thighs, or even leftover whole chicken)
Salt and pepper to taste
3 tbsp butter
3 cloves of garlic, minced
1 tbsp soy sauce
1/2 c maple syrup
⅓ c chopped onion
½ c chicken broth
3 tbsp ketchup
1 tablespoon of sesame oil
Green onion for garnish

Directions for the Maple Garlic Shredded Chicken Sandwich Recipe:
Turn the instant pot to saute.
When it is hot, add butter and chicken.
If you are using raw chicken, saute 4 minutes per side.
If you are using leftover chicken, warm it up and stir so the butter coats the meat to avoid it drying out.
Turn the instant pot off, add maple syrup, onion, soy, garlic, sesame oil, ketchup, salt and pepper.
Pour chicken broth over top and stir to make sure nothing is stuck to the bottom or the sides of the instant pot.
Replace the lid and seal.
Set the instant pot to manual. If you are using raw chicken, set the timer for 15 minutes.
If you are using leftover maple girl chicken chicken, set the timer for 10 minutes.
When the timer beeps, allow the instant pot to naturally release steam. Using the quick release valve will cause rubbery chicken.
The chicken will be very tender, and will shred with a fork easily.
Serve on toasted buns.
If the sauce is too thin for your liking, turn the instant pot to saute and allow it to simmer for 5 minutes.
Serves 6 large sandwiches or 8 small sandwiches.
Allow leftovers to cool to room temperature before storing in an airtight container in the fridge.
